I can't get enough of this salad. It is a filling, cool summer salad I've been making weekly. It is good to have in the refrigerator for when you are looking for a snack or a quick meal.
I don't use measurements when I cook, so here is a rundown of the recipe. I found it in a Food and Wine Cook Book.
Short Grain Brown Rice
Sliced Mango
Sliced Avocado
Diced Red Onion
Sliced Cilantro
Chopped Grilled Chicken (optional)
Lime Juice
Salt
